Ingredients

  • 1 cup (150g) wholemeal self raising flour
  • 125 g fresh ricotta
  • 1 cup (250ml) milk
  • 20 g unsalted butter, melted
  • 1 egg, beaten
  • 1 tsp bicarb soda
  • 2 tbsp (40g) caster sugar
  • 1 lime, rind grated, juiced
  • Pinch salt
  • Extra virgin olive oil spray
  • Sliced bananas or berries, to serve
  • Yoghurt, to serve
  • Honey or maple syrup, to serve

Steps

  1. Combine flour, bi carb soda, sugar and salt in a bowl. In a separate bowl, combine the ricotta, milk, melted butter, egg, lemon rind and juice, beating well until smooth.
  2. Gradually whisk wet into dry ingredients to form a smooth batter.
  3. Heat a large heavy based, non-stick frying pan, spray lightly with oil and pour in 1/3 cup batter or to the pancake size you prefer! Cook over medium heat until you start to see tiny bubbles appear on the surface, then flip and cook other side for 1-2mins.
  4. Serve warm with a spoonful of yoghurt, banana slices and some maple syrup. Ooooh baby!
