Tofu red curry

Ingredients

  • 1 tbsp of extra virgin olive oil
  • 1 medium red onion, thinly sliced
  • 1/3 cup of vegetarian red curry paste
  • 400g can of coconut milk
  • ½ water
  • 2 x carrots thinly sliced
  • 1 tsp shredded kaffir lime leaves
  • 8 x broccolini, ends trimmed off
  • 200g tofu puffs
  • 150g snow peas

Steps

  1. Heat oil in medium frypan, cook onion until softened.
  2. Shallow fry tofu puffs to crisp up outside. Remove and set aside.
  3. Add curry paste, coconut milk, water, carrots and kaffir lime leaves. Bring to a simmer and cook for 5 minutes.
  4. Add broccolini and tofu puffs to pan and cook for 5 minutes.
  5. Add snow peas for remaining minute and season to taste.
  6. Serve with brown rice.
