
Ingredients
Salad
- 2-3 cans of chickpeas, drained and rinsed
- 1/2-1 cup currants soaked in 150ml lemon juice (or juice of 1 lemon)
- 1 bunch parsley, finely chopped
- 1 red onion, finely diced
- 1 red capsicum, finely diced
- 1 tbsp regular curry powder
- 1/2 cup extra virgin olive oil
Dressing
- 2 cups Greek style yoghurt
- Juice of 1 lemon
- 1 tsp ground cumin
- 1 tsp ground coriander (unless you’ve got the gene that makes you HATE it! 😝)
