Ingredients

Salad

  • 2-3 cans of chickpeas, drained and rinsed
  • 1/2-1 cup currants soaked in 150ml lemon juice (or juice of 1 lemon)
  • 1 bunch parsley, finely chopped
  • 1 red onion, finely diced
  • 1 red capsicum, finely diced
  • 1 tbsp regular curry powder
  • 1/2 cup extra virgin olive oil

Dressing

  • 2 cups Greek style yoghurt
  • Juice of 1 lemon
  • 1 tsp ground cumin
  • 1 tsp ground coriander (unless you’ve got the gene that makes you HATE it! 😝)

Steps

  1. Combine salad ingredients on a large platter or bowl
  2. Combine dressing ingredients
  3. Dollop dressing on salad and serve immediately, ideally with good company or a good book
