Ingredients

  • 1 cup peanuts
  • 1 1/2 cups natural cashews
  • 1/2 cup dates
  • 1/2 cup oats
  • 1/3 cup LSA
  • 2 tbsp maple syrup

Method

  1. In a food processor or Thermomix, combine the peanuts, 1 cup of the cashews, dates, oats and LSA until it forms a moist mixture (this may take longer than you think – it relies on the nuts releasing their oils).
  2. Add the maple syrup and additional 1/2 cup cashews and pulse to disperse and crunch the cashews.
  3. Press mixture into a loaf tin lined with baking paper and refrigerate until set.
  4. Cut into bars to serve.
