Ingredients
- 1 cup peanuts
- 1 1/2 cups natural cashews
- 1/2 cup dates
- 1/2 cup oats
- 1/3 cup LSA
- 2 tbsp maple syrup
Method
- In a food processor or Thermomix, combine the peanuts, 1 cup of the cashews, dates, oats and LSA until it forms a moist mixture (this may take longer than you think – it relies on the nuts releasing their oils).
- Add the maple syrup and additional 1/2 cup cashews and pulse to disperse and crunch the cashews.
- Press mixture into a loaf tin lined with baking paper and refrigerate until set.
- Cut into bars to serve.
