Ingredients

  • 8 x broccolini, ends trimmed
  • 1 x spring onion, thinly sliced
  • 1 x carrot, thinly sliced
  • ½ x red capsicum, cut into 1 cm cubes
  • 1 cup edamame beans
  • 2 packets of microwave brown rice
  • 2 tbs kecap manis
  • Fried egg to serve (optional)

Steps

  1. Stir-fry broccolini and carrot for 5 minutes. Microwave rice at the same time and boil edamame.
  2. Remove broccolini from pan and add spring onion and red capsicum to carrot.
  3. Add rice, edamame and kecap manis to pan and stir-fry for 5 minutes.
  4. Serve on it’s own or with a fried egg.
