Ingredients

Chicken

  • Olive oil 
  • Oregano 
  • Lemon juice 
  • Salt 
  • Pepper 
  • Chicken breast (chopped into cubes or chunks) 

Greek Salad 

  • Cos Lettuce 
  • Tomato 
  • Cucumber 
  • Black olives 
  • Greek Feta – Cubed 

Greek Salad Dressing (Optional) 

  • Lemon Juice 
  • Olive oil 
  • Oregano 
  • Salt 
  • Pepper 

To serve

  • Low GI Wholemeal or wholegrain wraps

Steps

  1. Prepare Greek chicken marinade and toss cubed chicken through the marinade
  2. Marinate chicken for 30-60 minutes or longer (e.g. overnight) if you’re organised enough!  
  3. While chicken is marinating – prepare Greek salad and leave to the side for serving 
  4. Cook chicken in batches on a griddle pan or fry pan with a sprinkle of olive oil and cook until chicken is cooked through
  5. Serve chicken with salad and wraps if desired
