Ingredients

We promise it’s nice! And so damn good for you! Simply add your protein of choice for a super quick mid-week meal!

  • 1 Head cauliflower, finely chopped (or ready chopped cauli rice packet from the produce section of the supermarket).
  • 1 cup Brussels sporuds, chopped
  • 1 Leek, chopped
  • 1 cup Button mushrooms, sliced
  • 1 Clove garlic, crushed
  • 1 tsp Turmeric
  • 1 tsp Extra virgin olive oil

Steps

  1. Heat oil in a large pan over high heat. Add leek and garlic, stirring for 2-3mins before adding mushrooms and brussels sprouts. Stir until veggies soften.
  2. Add cauliflower rice. Stir to combine. Add turmeric powder (and/or any spices of your choice. It’s also delish with some paprika and ground cumin! You do you!)
  3. Serve with your protein of choice for a fool-proof mid-week meal!
