Banana chia walnut bread

Ingredients

  • 1 ripe banana mashed
  • 1/3 cup brown sugar
  • 1/2 cup extra virgin olive oil
  • 1/2 cup coconut milk
  • 11/2 cups wholemeal flour
  • 2 tbsp chia seeds
  • 1/2 cup walnuts , crushed
  • 1/4 cup LSA
  • 2 eggs (for a vegan option, ditch the eggs and add an additional tbsp Chia and tbsp LSA)
  • 1tsp cinnamon
  • 1 tsp vanilla essence
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda

Method

  1. Preheat oven to 180 degrees celcius. Line a loaf tin with baking paper. 
  2. Combine all dry ingredients together. 
  3. Combine all wet ingredients together. 
  4. Combine both dry and wet mixtures together by folding until combined.
  5. Sprinkle top with additional crushed walnuts or coconut flakes, if desired.
  6. Pour into prepared pan and bake for 35-40 mins or until a skewer comes out clean. 
  7. Allow to cool in tin before turning onto a wire rack. Cut and share! Once cooled this recipe freezes well – slice and wrap individually for ready-to-go snacks!
