Ingredients
- 1 ripe banana mashed
- 1/3 cup brown sugar
- 1/2 cup extra virgin olive oil
- 1/2 cup coconut milk
- 11/2 cups wholemeal flour
- 2 tbsp chia seeds
- 1/2 cup walnuts , crushed
- 1/4 cup LSA
- 2 eggs (for a vegan option, ditch the eggs and add an additional tbsp Chia and tbsp LSA)
- 1tsp cinnamon
- 1 tsp vanilla essence
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
Method
- Preheat oven to 180 degrees celcius. Line a loaf tin with baking paper.
- Combine all dry ingredients together.
- Combine all wet ingredients together.
- Combine both dry and wet mixtures together by folding until combined.
- Sprinkle top with additional crushed walnuts or coconut flakes, if desired.
- Pour into prepared pan and bake for 35-40 mins or until a skewer comes out clean.
- Allow to cool in tin before turning onto a wire rack. Cut and share! Once cooled this recipe freezes well – slice and wrap individually for ready-to-go snacks!
